Last call for anyone who may still want to submit a favorite recipe, but maybe thought it was too late. I've had so much fun trying all of these recipes! I'm headed out for a grocery shopping trip in a few days,so feel free to send them.
I thought I would send you one of the cookie recipies I use to make for some of the Ditto guy missionaries! I think it was a favorite back then. It is from Mrs. Feilds, Chocolate Rasin Cookies 1 Cup Butter 2 oz unsweetened Bakers Choc. 2 1/4 cup flour 1 tps soda 1/4 tsp salt 1 cup brown sugar 1 cup sugar 2 eggs 2 tsp vanilla 1 1/2 cup raisins 1 cup choc chips (I always use the whole bag the more the better right?) melt 1/2 cup butter with the choc. combine flour, soda and salt in sep. bowl blend sugar, then add butter, mix then add eggs and vanilla, mix, add choc mixture and then flour. Bake at 300 deg for 20-22 min ENJOY!
Ok good. I was thinking about this early this morning when I couldn't sleep, and I was like, Bollocks I missed the contest!
I got this recipe from Real Simple, and have modified it slightly. This is a delicious way to use zucchini, which as you know is plentiful during the summer. And it's healthy because you don't use much cheese; you use just enough feta to give the dish a nice kick.
Feta Chicken with Zucchini
Serves 4
1 lemon 4 small boneless, skinless chicken breasts 3-4 small zucchini 2 T olive oil Kosher salt & freshly ground pepper to taste 3 oz feta cheese (half of an Athenos container)
Preheat the oven to 375 degrees. Drizzle 1 T oil in bottom of roaster pan. Thinly slice the lemon. Spread half over the bottom of the pan, and put half in a medium bowl. Slice the zucchini lengthwise, then into 1/4 - 1/2-inch half-moon slices. Add to bowl, along with remaining T of oil and salt & pepper. Toss. Place chicken breasts in one layer in center of pan and sprinkle with salt & pepper. Spread zucchini/lemon mixture around the edges of the pan. Sprinkle feta all over. Bake 40-45 minutes. You might want to cover with foil for the last 5-10 minutes if your feta is browning quickly.

I'm gonna have to try that zuchinni one, it looks great.
Macaroni and Cheese
Buy a box of Macaroni and Cheese (Kraft, unless on a budget, then Western Family)
Follow directions on box.
Eat in a bowl.
